Amchur Slices are Sundried green (unripe) mangoes. The dried slices are a light brown color. They possess a sour-sweet, warm and slightly resinous smell with a slightly sweet and acidic flavor. These can easily be ground into powder. The use of amchur is mainly used in Indian cuisine to add some tangy tartness to curries and soups. The dried slices add a piquancy to curries and the powder acts as a souring agent akin to tamarind. It is particularly useful as an ingredient in marinades, having the same tenderizing qualities as lemon or lime juice. As a tenderizer, it is much more potent than lemon juice, please use sparingly. Poultry and fish are greatly enhanced by Amchur spice.
